Zelzin AKetZAlli

Zelzin Aketzalli is the first Mexican to have hiked the Triple Crown (Appalachian Trail, Continental Divide Trail, and Pacific Crest Trail) 8,000 miles of hiking. As a professional explorer, she has solo hiked and created trails in the most remote parts of Mexico and in some of the most challenging terrain in the world which include both deserts and jungles.

Zelzin’s incredible story of overcoming a challenging life in Mexico has created a mindset in her life to always believe she can turn the impossible into something extraordinary, a message that she emphasizes in her motivational speaking for corporations, schools, and non-profit organizations. Zelzin is an outspoken champion for women and diversity in the outdoors and actively works as an educator helping to bring new faces into the outdoors and is inspiring a whole new generation to get outside.

When we approached Zelzin’s about making a signature meal with her one thing became very clear. The energy that she has put in to crushing nearly 10,000 miles of trail, is the same kind of enthusiasm she has put in to developing this meal. One of the most important things that Zelzin expressed to us was to create a meal that is reflective of her culture and where she is from. We tried a lot in our R&D process and ultimately came up with a meal we think is pretty darn delicious and Zelzin approved. Like Jeff’s meal Zelzin’s Pork Chili Verde with Rice, Beans and Corn makes a delicious trail taco or burrito on trail with the addition of a tortilla. We truly believe you can taste Zelzin’s passion for this meal in every single bite.
